Seafood training: the first steps

Seafood Training: The First Steps is a computer-based learning resource for workers undertaking accredited training in the Australian Seafood Industry. The resource consists of over 1100 Adobe Flash software files with associated audio and video files contained within a Gaia framework that provides navigation between files.

The resource is provided on the internet at www.seafoodfirststeps.com.au and is also available as a download and on a DVD from Seafood Training Tasmania. It runs through all common browser software.

The resource is structured to provide users with training material in the following industry sectors: Aquaculture, Catching, Distribution, Processing and Wholesale/Retail. A further section, All Sectors, contains material for users in all of these sectors. Each section is structured to allow access to material through menu screens of buttons that open sequences of screens or ‘pages’ on each topic, for example: the Catching menu has buttons for Introduction, Working in the Industry, Care of the environment, Catching methods and Maintain quality. In some cases a menu button opens sub-menus to cover different aspects of a topic, for example: the All Sectors menu includes Hazards which has a sub-menu containing Hazard and risk control, Biological hazards, Chemical hazards and Physical hazards.

The training material is designed to provide underpinning knowledge to support accredited training in the core units of competency from the Seafood Industry Training Package: SFICORE101C Apply basic food handling and safety practices, SFICORE103C Communicate in the seafood industry, SFICORE105B Work effectively in the seafood industry and SFICORE106B Meet workplace OHS requirements. A detailed ‘mapping’ of the material in the resource to the requirements of these units of competency is included in the Trainer Guide that is included in the resource.

The resource is designed to assist workers to access basic information about working in the Australian Seafood Industry. The information is presented in a form that makes it accessible to users with limited reading skills by: keeping simple and consistent language; providing ‘mouse-over’ glossary definitions; limiting the amount of written material on each screen; illustrating screens with graphics, animations and videos; and, providing an optional voiceover of the contents of the screen. The Communication section (All Sectors) provides useful information for learners on a variety of topics such as Find Information, Complete work forms, Participate in workplace discussions, Follow spoken messages and Follow written instructions.

The resource also includes interactive quizzes to engage the learner. These are designed as formative assessment instruments and the resource does not include any summative assessment materials.

The resource provides information about the Australian Seafood industry from the tropical areas of Northern Australia to the temperate waters around Tasmania, and no one learner is likely to use more than 25% of the available resources. The resource is designed to be used in accredited training under the guidance of a qualified trainer/assessor. A Trainer Guide is provided to assist trainers/assessors in using the resource; and a Learner Workbook is provided in Microsoft Word for the trainer/assessor to customise to the context of each learner or group of learners.

'From boat to belly': a chain approach to quality, safety and hygiene for the Australian seafood industry

This training video focuses of occupational health and safety, food safety and hygiene principles and best practices in maintaining seafood quality. It demonstrates handling requirements throughout the stages of:

  • catching
  • farming
  • harvesting
  • processing
  • storing
  • transporting
  • marketing and selling of fish and seafood

The video is also available in Cantonese, English, Greek and Vietnamese. It does not specifically cover English language, literacy or numeracy.
