Healthy harvest: controlling germs during vegetable production
Australia is recognised as having some of the safest (to eat) vegetables in the world. It is important to keep it that way. This kit of video, manual and trainer notes (developed through WELL) provides information and training in English language and literacy for farmers, vegetable growers , packers and drivers- those involved along the 'paddock to plate food chain' - to identify and control the germ risks associated with safe vegetable production. The material is organised into 6 units:
- Controlling germs: use of the Hazard Analysis Critical Control Points system, why control hazards, the differences between vegetable safety levels, etc.
- Pre-planting: soil, choosing land, soil types, soil testing, corrective actions, fertilisers, record keeping
- Planting and growing: applying chemicals, keeping germs out of the water supply, irrigation, sampling etc.
- Harvesting: issues of personal hygiene, contamination, illness and injury
- Post-harvest: monitor water quality, sanitisers, personal hygiene, building hygiene, packing, storage etc
- Transport and testing of vegetables: when and how to test vegetables
The video presents material around all these issues which are then reinforce through the activities outlined in the manual. Attention is given to particular specialised vocabulary, there are spaces for the trainee's to take notes. The trainer notes provide useful background information on how to effectively support the trainees, issues to do with considering language literacy and numeracy issues in training, focus questions for each of the units and strategies for training.
